Friday Happiness

This Friday is definitely a happy Friday. I took off from work yesterday to celebrate Rosh Hashanah with my family (happy jew year!!), and then I took off from work today because, why the heck not! 3-day work week? I can handle that. The real reason why I took off though, is because my younger brother plays ice hockey for Muhlenberg College and he has his first home game of the season tonight. Since my commute is so unpredictable these days (NJ Transit, you suck!), I wanted to make sure I'd definitely be home to take the trek out to Pennsylvania with my parents to see him play. Go 'Berg! Hope you all have the weekend!

Cookies and Cream Cupcakes

Prepare yourself for dessert heaven. These cookies and cream cupcakes are definitely one for the books. I saw this recipe on Pinterest (follow my boards!) and couldn't help myself. They are certainly for the person with a serious sweet tooth so hold onto your taste buds, hit up the gym, and make an appointment with your dentist. You'll understand why after you try one.












Here's the recipe:

Ingredients:
For the cupcakes:
24 Oreo halves, with cream filling attached
2 1/4 cups all-purpse flour
1 tsp. baking powder
1/2 tsp. salt
8 tbsp. unsalted butter, room temperature
1 2/3 cups sugar
3 large egg whites
2 tsp. vanilla extract
1 cup milk
20 Oreos, coarsely chopped

For the frosting:
8 oz. cream cheese, room temperature
6 tbsp. unsalted butter, room temperature
1 tbsp. vanilla extract
4 cups confectioners' sugar
2 tbsp. heavy cream

Directions:


Preheat the oven to 350* F. Line the wells of 2 cupcake tins with paper liners. Place an Oreo halve in the bottom of each liner with the cream side up.

In a medium bowl, combine the flour, baking soda, and salt. Stir together until blended and set aside.

In another bowl, combine the butter and sugar using an electric mixer. Beat on a medium-high speed until light and fluffy. Blend  in the egg whites, one at a time, beating well after each addition. Blend in the vanilla extract.

Using a low speed to blend, mix in half of the dry ingredients just until they are incorporated. Add the milk and beat until just combined, then mix in the remaining dry ingredients.

Gently fold  in the chopped Oreos with a spatula until everything is evenly incorporated. Be sure not to over mix.

Divide the batter amongst the cupcake wells and bake for 18-20 minutes. When done, allow the cupcakes to cool in the pans for 5-10 minutes then transfer them to a cooling rack to cool completely.

To make the frosting, combine the cream cheese and butter in a bowl and beat using an electric mixer on medium-high until smooth. Blend in the vanilla extract. Beat in the confectioners' sugar until incorporated and smooth. Add the heavy cream and whip for about 4 minutes. The frosting should be light and fluffy. If it is a little loose, add more confectioners' sugar.

Frost the cooled cupcakes as desired and serve. Enjoy!!

All Cased Up

I've been waiting patiently for this so called new iPhone 5 to debut, but honestly, I'm was getting P-R-E-T-T-Y tired of holding out. Almost so tired that I was beginning to question it's actual existence. Until I got wind from this article that it might possibly be arriving next month. Is it true? Guess I'll have to hold out a couple more weeks to find out.

In the meantime, I was blog browsing yesterday and came across this adorable iPhone case on one of my favorite blogs, Atlantic-Pacific (if you haven't already checked it out, you TOTALLY should. She is amazing.). Anyway, now I want one. Hoping they come out with an iPhone 5 version so that I can jazz up my new toy...if when i get my hands on one.







I must be addicted to iPhone cases because I blogged about these cool cases here as well. Hmm...

Friday Happiness

Happy almost weekend everybody! Friday is here and I am VERY excited for this weekend. Let's skip to my Sunday plans (because clearly I can't contain my excitement)...RED SOX/YANKEES GAME! I'm keeping my fingers crossed that my Sox prove all these silly little Yankee fans wrong...we will win! I have faith. And after the game, as long as the weather holds out, I'm planning on heading over with Nicky and some friends to the San Gennaro festival down in Little Italy....umm YUM! The rest of the weekend is pretty low key, maybe a football or hockey game. Guess it is a sports filled weekend. I'm not opposed. Oooh and some cupcake making action too...recipe and pics to come next week!

Time Tells All

My Michael Kors watch gets lots of attention, and to be honest I can't really complain. I bought this one it as a present to myself back in December and have yet to regret it. It is one of my favorite pieces and I wear it as often as possible. To everyone who has complimented me on it, thank you!

I have an addiction to everything Michael Kors, and I am thinking I want to start a tradition for myself....every December, I want to buy a new watch...specifically Michael Kors-unless of course anyone wants to contribute to my watch fund so I can buy myself a Rolex or a Movado...just throwing it out there :). Here are some of the new styles that I currently have my eye on...

Splurge: Donna Karan

I've been channeling my inner Rachel Zoe lately- must have something to do with her show starting up again on Bravo- and I've been waiting for the weather to get cool so that I have an excuse to start wearing fur. I've posted recently about my nana's lovely leather and fur coat I found tucked away in a closet at home, and I've been DYING to wear it. Oh, and my fur vest that I bought last September. Come on cooler weather I'm ready for you!

Back to Rachel Zoe though...I love the way she pairs fur vests and coats with leggings, dresses and 70s style jeans, and I'm totally digging this Donna Karan vest. I think it has that Rachel Zoe vibe that I'm trying to go for and I love the idea of it being longer in the front and shorter in the back. Makes for in interesting shape once it is on the body. Now if only I had a spare $3,900 laying around....

Polished

Remember when you were 10 years old and you'd go get your nails done and they'd paint little flowers or line bursts on your nails? It was always such a treat when you looked down at your hot pink or blue nails and saw the little designs. Well it seems as though this little trend has yet to subside, as nail art is all the rage. I'm certainly adventurous with color and have no problem being super obnoxious with a neon color for summer or navy blue for the colder months or even a little jazzy sparkle, but I tend to shy away from any designs. These cool looks have me inspired though, and I'm thinking I might need to switch up my game this weekend when I go for my mani/pedi. What do you think?
